This recipe makes 8 Servings
  • 1 ripe avocado
  • 1/8 teaspoon lemon juice
  • 1 tsp vanilla extract
  • ¼ tsp cream of tartar
  • 1¾ cups confectioner’s sugar

Cut avocado, remove pit and scoop out meat.

Puree avocado meat with lemon juice, vanilla extract and cream of tartar until smooth. Add confectioners sugar and mix well.

You can use it immediately, or for a stiffer icing, place in refrigerator for a couple of hours.

Yields 1 cup frosting; serving size is 2 tablespoons
